Which oil is best for cooking in india: Healthiest oils

Oil is a very important part of Indian cooking, but which cooking oil do you use?  Do you use sunflower oil groundnut oil or olive oil?  If yes, today I am going to tell you the best oil for cooking.  We use a lot of cooking oil for Indian cooking, so it is very important to use healthy oil, whereas if you cook food everyday in unhealthy oil, then this oil makes your weight gain, blockages in heart, diabetes and even  Can also cause cancer.  If you ask me, what is the one thing that I should change in my food which can improve my health?  So my answer would be to change the oil in which you cook.


Refined oils-


It is very sad that more than 90% of people in India nowadays cook in refined oils.  Most of the sunflower, rice bran, groundnut, soybean oil found in the Indian market is refined oil.  But what is the problem with refined oil?  In listening to friends, the refined may sound a bit sophisticated, but in medical terms, refined oil means spoiled oil;  Yes, bad oil. 

Refining is a multistage process, firstly the oil is extracted using a chemical solvent, even hexon gas, at temperatures above 200 degrees.  Due to such a high temperature, the vitamins and minerals present in the oil are destroyed and the healthy fatty acids of the oils break down and become trans fat, the process does not end here.  The oils are again heated to high temperature to neutralize the oil test and eliminate the fragrance of the oil. In the last, harsh preservatives such as TBHQ and antifoaming agents such as dimethyl ciloxan are added, obviously so that they last longer and do not become foamy on heating.  Then the last that remains is colorless, tasteless, odorless and nutrition less liquid;  The smoothness of oil is also largely gone. These so called heart healthy oils are then packed and sold, be it any oil, once it has gone through this refining process, it loosens all its natural properties. Healthy fats are converted to trans fats, basic oil deteriorates absolutely. Maximum people nowadays use this refined oil 3-4 times a day to cook, it can cause a lot of serious health problems in the long term, I would even say that if you have refined oil in your kitchen then throw it away.


Then what to use?


Olive oil-

By the way, people who are getting some health congestion nowadays use olive oil. Due to the tremendous marketing of European Union, nowadays you will find a lot of olive oil in the Indian super market.


Is olive oil is healthy?


Of course, olive oil is one of the healthiest oils.  But while in India, I will not recommend you to use olive oil.


There are 3 reasons for this-


1. First of all, olive oil is very expensive. Due to 1 liter olive oil being more expensive than Rs 1200. so, cooking food in olive oil every day is not in the budget of most people.

2. Due to the increasing popularity of olive oil, many cases of adulteration have also been seen.  Some tests have even revealed that 60-80% of imported olive are adult rated.

3. Olive oil does not blend well with Indian recipes.  Think of the meaning, if you make potato parathas in olive oil then what will be the test.  Olive oil is a very good option if you are making pasta, salad or any other Spanish or Mediterranean dishes, but not at all for Indian dishes.



So is there any oil in the Indian market that is healthy, increase the flavor of our dishes and do not cut our pockets too?


Yes of course, cold pressed or wood pressed, sesame oil, mustard oil, peanut oil and coconut oil is the best oil for us.  Not cold refined but cold pressed or wood pressed or what we call Indian as raw condensed oil is best for Indian cooking. 

Cold pressing is an ancient technique in which heat is not used to extract oil from seed.  This not only destroys vitamins and minerals but also maintains the fragrance and flavor of the oil.  The best quality seeds are used to extract oil from this technique, and for this reason the oil that comes out is also of high quality.  It also has a very high smoking point of all the oils, due to which they can also be used for deep and shallow frying.  The smoking point of any oil is the temperature above which the fatty acid bonds of the oil break down and the oil deteriorates. 

It will be necessary to talk about the controversy of coconut oil;  A few years ago a major marketing campaign was launched by refined oil companies against coconut oil. They said that the saturated fat in coconut oil is very high, due to which it is unhealthy, but then research has shown that yes it is true that coconut oil contains saturated fat, but it is a special type of saturated fat.  Is called medium chain fatty acids and these medium chain fatty acids are healthy for human body. Today, more than 1500 studies have proved that coconut oil is one of the healthiest foods in the world. In Kerala and Tamil Nadu people have been using coconut oil for centuries and surveys show that their hearts and brains are actually quite healthy. 

Another controversy was regarding mustard oil, because mustard oil contains 47% Erucic acid, due to which it was also targeted.  In USA Canada and Europe it has been banned for food.  The reason for this ban was a study conducted on laboratory rats, these rats were fed mustard oil in very high quality due to which the problem was seen in their hearts.  But till date no harmful effects of mustard oil have been seen in Humans.  Mustard oil has been used in northern and eastern areas of India and even in Bangladesh, Korea and China for centuries.  Even when the doctor of AIIMS compared it with the rest of the oils in a study, the inclusion of olive oil showed that the ratio of omega 3 and omega 6 in mustard oil is the best, this is what makes it heart healthy.  Its smoking point is also very high, due to which you must have seen that mustard oil is often used for deep frying. Raw condensed mustard oil is easily available in the Indian market and the best part is that it is also budget friendly, you can use any of these four oils while in India.  Actually we were using these oils but due to some such overseas marketing campaigns, we stopped these oils and started using refined oils and olive oils so you can understand how brainwashing can be a marketing  Campaign.  In India, which oil to use for cooking, it used to depend on which region you live.  For example- for Kerala and Tamil Nadu people, coconut oil. sesame oil for Andhra and Rajasthan. mustard oil for north and western India. peanut oil are the most used in Central India (Gujarat).  If you look carefully, not only these oils suit the climate of these regions but also increase the flavor of the dishes cooked locally. 


Ghee-


Friends, this thing will remain incomplete if I do not talk about ghee.  Ghee has the highest smoking point compared to all oils. This is undoubtedly the best for all types of cooking, even deep frying.  Do you know that once you use any oil, it should not be used again, except for ghee.  Ghee is the only oil in which you can deep fry and use again.  You will be surprised to know that ghee has been given the status of clarified butter in the US as premium cooking oil.  The doctors there are recommending to drink two to three teaspoons of ghee in the coffee, the only downside of ghee can be said that cooking food in ghee every day may not be available to everyone, but what is the point  And when I am saying ghee, I mean desi cow ghee, not Jersey; or you can use buffalo ghee too.
